A Family Legacy of Flavor: The Story Behind The Colonnade and Cravings à la Carte
The Colonnade Cafeteria was a cherished dining establishment in Louisville, Kentucky, with a rich history spanning nearly a century. Founded in 1913, on Fourth Street, offering residents and visitors a welcoming place to enjoy homestyle meals. In 1926, the cafeteria relocated to the lower level of the Starks Building, a notable 14-story structure designed by the renowned architect Daniel Burnham and completed in 1913.
Throughout its tenure in the Starks Building, the Colonnade became renowned for its comforting dishes, such as turkey with dressing, Waldorf salad, and an iconic iceberg lettuce wedge topped with blue cheese or cottage cheese dressing. Homemade pie slices were also a highlight, drawing patrons from all walks of life. The cafeteria’s unique lunch line was a hallmark experience, where a diverse clientele, including longtime regulars with their preferred tables, navigated the bustling atmosphere.
In 1997, brothers, Chuck and Joe Krill, bought the Louisville landmark. The Colonnade continued to operate until 2006, using the original Colonnade recipes. Chuck and Joe purchased Cravings ala Carte, located in the PNC Tower at 5th and Main, in 2004. They brought the same recipes, and the Colonnade tradition continued in the new location.
Chuck and Joe proudly served Louisville’s Downtown lunch community together for 28 years. They also built a thriving catering business. Colonnade Catering provides meals for events of any size, including weddings, office parties, and business lunches.
Today, Cravings ala Carte remains a family-owned business. Chuck’s two sons, Casey and Clay, have taken over the restaurant. Casey and Clay both grew up at the Colonnade and Cravings and it was an easy decision to continue in the family tradition. They both attended Trinity High School and Centre College.
Casey, and his wife Lara, have three children, Andrew, Madison, and Olivia. All three children enjoy working in the restaurant. When school is not in session, three generations of the Krill Family can be found working together. Casey and Lara are active members of St. Albert the Great Parish.
Clay, and his wife Michael Ann live in St. Matthews and are also active members of St. Albert the Great Parish.
While many of the faces have changed over the family’s nearly three decades of operation, the foundation of the business remains the same: Friendly service, unique and affordable lunch options, and a commitment to excellence.
